Comfort Food

On this rainy and cozy May day, my thoughts turned to my nonni's semi-homemade risotto, quick and easy to make, while mouth-watering and delicious! It's one of those dishes I always crave and could make over and over again without ever getting tired of it. Thanks for sharing, Nonni, and passing this semi-homemade recipe down to me.

Ingredients
- 1/4 cup chopped onion
- 1 large clove chopped garlic
- 2 tbsp. butter
- 1 can cream of chicken soup
- 1 1/2 cup chicken broth
- 1/2 to 3/4 cup wine and enough water to make 1 cup
- 1/8 tsp. saffron
- 1/2 tsp. salt
- 2 to 3 tbsp. parmesan cheese

Directions:
- Saute onion and garlic in butter. Combine in baking dish with rice, cream of chicken soup, chicken broth, salt, wine and saffron.
- Cover. Bake for 1 hour in 350 degree oven. Stir once or twice. Reduce heat if cooking too fast.
- Take out of oven, sprinkle with cheese!
